The same sausage as the Mild, made to the family recipe carried down from Singh’s Mutton Market in Stanger, with the masala carrying real warmth rather than just perfume. Coarse-cut mutton, hand-roasted and ground masala, fresh garlic and ginger, packed into natural sheep casing and coiled by hand. No rusk fillers, no beef, no pork.
This is the heat to use in a curry. Extra Hot in a pot is a different dish and not a better one. Grill slowly over medium coals; the casing splits if you rush it. Ask us to cut it into 6 cm lengths at the counter if it is going into a gravy.
