Made to the family recipe carried down from Singh’s Mutton Market in Stanger — coarse-cut mutton, hand-roasted and ground masala, fresh garlic and ginger, packed into natural sheep casing and coiled by hand. No rusk fillers, no beef, no pork. Grill slowly over medium coals; the casing splits if you rush it.
